Tina's Uala Haleakala Salad Recipe

As part of Maui Health's month-long #JourneyTo5 5 year anniversary celebration, we hosted a weekly Farmers Market at Maui Memorial Medical Center to provide the opportunity for our hard-working caregivers to stock up on fresh, local produce, and products from fresh fruits and vegetables to Hawaiian chili pepper water, coffee, and more.

One of our farmers market vendors, Haleakala Supah Shots graciously shared her healthy recipe below:

⁠Tina's Uala Haleakala Salad Recipe

Ingredients

  • 3-4 lbs Uala (sweet potato, variety of preference)
  • 3-4 large carrots
  • 6-8 green beans
  • 12 oz cherry tomatoes
  • 1.5 oz Thai basil
  • Vinaigrette of your choice

Directions

  • Steam uala for 12-15 minutes. Let cool then peel.
  • Dice uala into 3/4 inch cubes. Dice carrots into 2-3 inch lengths. Dice green beans into thin slivers.
  • Cut cherry tomatoes in half.
  • In large bowl, assemble all ingredients together with uala on the bottom.
  • Fine dice Thai basil and sprinkle over the salad.
  • Gently mix ingredients. Drizzle vinaigrette over the salad and serve.

About Haleakala Supah Shots

Tina Keko‘olani started making healthy hot sauces for her family using Hawaiian chili peppers and liliko‘i; two of their favorite ingredients. In 2015, she created an immune-boosting elixir made with Hawaiian chili pepper water and fruit juice. She also added vinegar, organic agave, and hand-harvested Hawaiian sea salt to help tone down the spiciness. She set up a booth at a community event near her home in Kula and the rest is history. Demand soon began to outpace supply as the word spread about Haleakala Supah Shots. Born on the slopes of our beautiful mauna Haleakala, these Maui Supah Shots are truly healing and delicious.
